Unsaved Chicken Andouille Red Beans And Rice

Ingredients

  • 2 tbsp Extra virgin olive oil
  • 1 Green bell pepper(s), coarsely chopped
  • 8 oz Red beans and rice mix
  • 2 Andouille sausage, cut into 1/2-inch slices
  • 1 lb Boneless skinless chicken breast, cut into 1-inch pieces
  • 1 tsp Fresh garlic clove(s), minced
  • 1 Fresh white onion(s), coarsely chopped

Instructions

  1. Heat oil in a large, deep non-stick skillet over medium-high heat.
  2. Add onion, garlic, and pepper, and sauté 2 minutes.
  3. Add chicken, and sauté 3 minutes.
  4. Add sausage, and sauté 2 minutes.
  5. Stir red beans and rice mix and 3 cups water into chicken and sausage mixture; bring to a boil.
  6. Reduce heat to medium-low and simmer covered 10 minutes, then uncover and cook 10 minutes.
