Chicken and Mushrooms

Serves 4

Ingredients

  • 2 tbsp Extra virgin olive oil
  • 1 lb Boneless, skinless chicken breasts
  • 1 tsp Dried thyme
  • 1/2 tsp Ground black pepper
  • 1 tbsp All purpose flour
  • 1 cup Baby bella whole mushrooms, sliced
  • 2 Garlic cloves, sliced
  • 1/2 cup White wine

Instructions

  1. Heat large skillet over medium-high flame and add 1 tablespoon of olive oil.
  2. Season chicken with dried thyme, black pepper and dust with flour.
  3. Sauté chicken for 4 minutes per side, adjusting flame as not to burn the chicken.
  4. Remove chicken from pan and add in remaining olive oil and mushrooms. Cook for 2-3 minutes until they begin to brown.
  5. Add garlic and cook for 2 minutes longer.
  6. Add white wine and bring the wine and mushrooms to a gentle simmer then reduce heat. Cook for 2 minutes.
  7. Return chicken back to pan and let it cook for 3 minutes.
