Cherry Dijon Braised Short Ribs

Ingredients
- 3 1/2 lb Beef short ribs
- 2 tsp Olive oil
- 1 1/2 cups Red onions, chopped
- 2 tsp Fresh garlic clove(s), finely minced
- 8 oz Cherries, pitted, about 2 cups frozen or fresh
- 1 cup Dry wine
- 1 cup Beef broth
- 2 tsp Dijon Mustard
- 1/4 cup Fresh Italian parsley, leaves only, chopped
Instructions
- Heat Instant Pot on "sauté" setting. Season ribs with a light dusting of salt and pepper. Sear ribs to brown well on all sides.
- Remove ribs and reserve on a plate. Add oil, onions and garlic and sauté for 2 to 3 minutes.
- Add ribs back into Instant Pot. Add cherries, wine, broth and mustard. Place lid on pot and lock in place, turn to "manual" setting and set timer to 45 minutes. Allow to pressurize, this process can take 10 to 15 minutes. Pot will then start cook time.
- Meat is done when it pulls easily from the bone. When cooking is complete, vent manually according to manufacturer's instructions. Adjust seasoning with salt and pepper if desired.
- Stir in fresh parsley and serve over cooked orzo or risotto, if desired.
- Chef's Note: Beef ribs can be purchased whole or cut in half. This recipe time is for half cut ribs.
