Cheesy Scalloped Potatoes

Ingredients

  • 1 Canola oil no-stick cooking spray
  • 4 Baking potato
  • 1/4 tsp Kosher salt
  • 1/4 tsp Ground black pepper
  • 2 tbsp All purpose flour
  • 1 cup Shredded Colby Jack cheese
  • 2/3 cup Fresh grated Parmesan cheese
  • 4 tbsp Unsalted butter
  • 1 1/2 cups Half & half

Instructions

  1. Heat oven to 350°F.
  2. Coat a 9 x 13-inch baking dish with nonstick spray.
  3. Peel potatoes, then slice very thin into 1/8-inch thick slices; use the slicing disk of a food processor or a sharp knife.
  4. Layer half the potato slices in baking dish.
  5. Sprinkle salt, pepper and 1 tablespoon of flour over potatoes.
  6. Layer potatoes with 1/2 cup of Colby jack and 1/3 cup Parmesan cheese.
  7. Dot with half the butter.
  8. Repeat steps 4-7 to make a second layer.
  9. Pour half and half cream evenly over casserole.
  10. Bake for 1 hour or until bubbly and a crust has formed.
  11. Let stand 5-10 minutes before serving.
  12. Cut into squares and serve while hot.
