Cheesy Egg Bites

Ingredients
- 8 Large Eggs
- 1 tbsp Green or original tabasco
- 2 tbsp Green onions, finely chopped
- 8 oz Monterey Jack cheese slices with Jalapeños
- 1 oz Smoked ham, cut into small pieces
Instructions
- Preheat oven to 300ºF. In a bowl, mix together eggs, hot sauce, and green onions.
- Lightly spray cups of a muffin tin (4 oz cups) with spray oil. Lay a slice of cheese on top of alternating muffin cups to allow space for cheese to melt.
- Place in oven for 1 minute (just long enough for cheese to soften enough to fall into muffin cups). Remove from oven.
- Divide chopped ham pieces and egg mixture evenly among cups, tucking any melted cheese back over the eggs. Return to oven for 10 minutes.
- Egg bites will puff up slightly and then fall as they cool. Allow to rest for 5 minutes before serving. The center will still be slightly soft, like the center of a poached egg. If a firmer texture is preferred, cook for 12 to 14 minutes.
