Cheesy Chicken and Broccoli Casserole

Ingredients

  • 1 1/2 lb Boneless skinless chicken breast, cut into 1-inch cubes
  • 2 tbsp Extra virgin olive oil
  • 1 tsp Salt free fajita seasoning
  • 2 tbsp Salted butter
  • 3 tbsp All-purpose flour
  • 1 1/2 cups Whole milk
  • 11 oz That green sauce
  • 8 oz Shredded thick cut Colby jack cheese, divided use
  • 2 1/2 cups Brown rice, cooked according to package directions
  • 10 oz Broccoli florets, steamed in microwave 3 minutes

Instructions

  1. Preheat oven to 375ºF and lightly grease a 9 x 13-inch glass baking dish.
  2. Combine chicken with olive oil and seasoning. Place a large non-stick skillet over medium-high heat. Add chicken and cook until well browned and cooked through. Remove from heat and set aside.
  3. Meanwhile place a saucepan over medium heat. Add butter and let melt, then stir in flour and cook until it resembles wet sand. Slowly whisk in milk. Allow to thicken stirring frequently.
  4. Once milk begins to thicken add in green sauce and 1/2 of cheese. Stir well to incorporate and then remove from heat.
  5. Layer in rice, broccoli and chicken in casserole dish and top with cheese sauce. Mix carefully with spoon and top with remaining cheese.
  6. Bake 15 to 20 minutes or until cheese is melted and sauce is bubbly. Let cool 10 minutes before serving.
