Cheesy Chicken and Broccoli Casserole

Ingredients
- 1 1/2 lb Boneless skinless chicken breast, cut into 1-inch cubes
- 2 tbsp Extra virgin olive oil
- 1 tsp Salt free fajita seasoning
- 2 tbsp Salted butter
- 3 tbsp All-purpose flour
- 1 1/2 cups Whole milk
- 11 oz That green sauce
- 8 oz Shredded thick cut Colby jack cheese, divided use
- 2 1/2 cups Brown rice, cooked according to package directions
- 10 oz Broccoli florets, steamed in microwave 3 minutes
Instructions
- Preheat oven to 375ºF and lightly grease a 9 x 13-inch glass baking dish.
- Combine chicken with olive oil and seasoning. Place a large non-stick skillet over medium-high heat. Add chicken and cook until well browned and cooked through. Remove from heat and set aside.
- Meanwhile place a saucepan over medium heat. Add butter and let melt, then stir in flour and cook until it resembles wet sand. Slowly whisk in milk. Allow to thicken stirring frequently.
- Once milk begins to thicken add in green sauce and 1/2 of cheese. Stir well to incorporate and then remove from heat.
- Layer in rice, broccoli and chicken in casserole dish and top with cheese sauce. Mix carefully with spoon and top with remaining cheese.
- Bake 15 to 20 minutes or until cheese is melted and sauce is bubbly. Let cool 10 minutes before serving.
