Unsaved Cheesy Beef Enchilada Soup

Ingredients

  • 1 lb Lean ground beef
  • 1 tbsp Adams Reserve Southwest Rub
  • 27 oz Tortilla soup
  • 2 cups Beef broth
  • 4 Yellow corn tortillas, cut into small 1-inch pieces
  • 1 cup Shredded mild cheddar cheese
  • 2 Large avocados, diced
  • 1/2 cup Fresh cilantro, chopped

Instructions

  1. Place a large skillet over medium-high heat, add ground beef and break into small bits with the edge of the spoon. Cook about 5 minutes.
  2. Sprinkle southwest rub over beef and cook 2 more minutes or until beef is no longer pink.
  3. Add tortilla soup and beef broth, and bring to a boil.
  4. Stir in tortillas and cheese, and simmer 10 minutes over medium heat.
  5. Garnish with avocados and cilantro.
