Cheesy Beef Enchilada Soup

Ingredients
- 1 lb Lean ground beef
- 1 tbsp Adams Reserve Southwest Rub
- 27 oz Tortilla soup
- 2 cups Beef broth
- 4 Yellow corn tortillas, cut into small 1-inch pieces
- 1 cup Shredded mild cheddar cheese
- 2 Large avocados, diced
- 1/2 cup Fresh cilantro, chopped
Instructions
- Place a large skillet over medium-high heat, add ground beef and break into small bits with the edge of the spoon. Cook about 5 minutes.
- Sprinkle southwest rub over beef and cook 2 more minutes or until beef is no longer pink.
- Add tortilla soup and beef broth, and bring to a boil.
- Stir in tortillas and cheese, and simmer 10 minutes over medium heat.
- Garnish with avocados and cilantro.
