Quick & easy:Cheeseburger Tacos

Serves 2

Ingredients

  • 5 oz Lean ground beef
  • 2 Keto tortillas
  • 2 oz Shredded cheddar cheese
  • 2 tbsp Red onion, very thinly sliced
  • 2 tbsp Dill pickle, about 4 slices, drained and chopped
  • 1 Small roma tomato, sliced very thin
  • 1/2 cup Romaine lettuce, shredded

Instructions

  1. Preheat a large frying pan over medium-high heat. Divide meat into two patties and press into a flat disc on top of each tortilla. Press raw meat all the way to the edges of the tortillas.
  2. Spray skillet with a little bit of spray oil. Place burgers meat-side down, tortilla-side up in pan. Cook for 3 to 4 minutes or until beef is nicely browned.
  3. Gently flip over to the tortilla side and top with cheese and onions. Cook for 1 to 2 minutes more, just long enough to lightly toast the tortilla.
  4. Remove from pan and garnish with pickles, tomatoes and lettuce to taste.
