Cheeseburger Egg Roll with Special Sauce

Ingredients
- 1 1/2 lb Ground beef
- 1 cup Yellow onion, diced
- 1 tbsp Garlic clove, minced
- 1 tbsp Burger spice rub
- 1 Fresh jalapeno pepper, diced
- 6 oz American cheese, diced
- 1/2 cup Dill pickles, diced
- 12 Egg roll wrapper
- 2 cups Vegetable oil
- 1/4 cup Pickle juice
- 1/4 cup Mayonnaise
- 1 tbsp Yellow mustard
- 1/4 cup Ketchup
Instructions
- Brown ground beef in a large non-stick skillet over medium-high heat, breaking up meat with a spoon as it cooks. Add diced onions, garlic, Burger Spice, and diced jalapeño. Continue to cook until onion is translucent.
- Strain excess fat and transfer meat mixture to a bowl. Add American cheese and pickles, toss and set aside.
- To form egg rolls, lay a wrapper on a clean surface with a corner pointing toward you. Place 1/3 cup of filling across center of wrapper.
- Tightly fold corner closest to you around filling then fold in right and left corners toward the center. Moisten fourth corner with a little water and tightly roll up egg roll and seal. Repeat.
- Heat oil in a large Dutch oven on medium to 350ºF. When oil is hot, fry egg rolls in batches until crisp and golden brown.
- To make the sauce, combine pickle juice, mayonnaise, mustard and ketchup. Serve on the side.
