Charred Veggie Fajitas

Ingredients

  • 12 oz Sliced portabellas
  • 12 oz Fresh fajita vegetables tray
  • 1/2 tsp Steak seasoning
  • 2 tbsp Vegetable oil
  • 12 H-E-B Mixla Tortillas
  • 1/2 cup Queso dip
  • 1/2 cup Fresh guacamole
  • 1/2 cup Fresh salsa, as needed

Instructions

  1. Heat a large cast iron skillet to medium-high.
  2. Toss mushrooms and sliced veggies with steak seasoning and oil. Set aside.
  3. Quickly heat tortillas in the skillet then transfer to a plate and cover with a towel.
  4. Add seasoned veggies to the hot skillet and cook for about 10 minutes, stirring frequently, until charred.
  5. To serve, fill tortillas with veggies, top with queso, guacamole and salsa.
