Charred Hogao Sauce

Serves 6

Ingredients

  • 4 Roma tomatoes, cut in half
  • 1 1/2 cups White onion, very roughly chopped
  • 1 bunch Fresh cilantro, roughly chopped, lower stems removed
  • 4 Garlic cloves, gently crushed
  • 1 tbsp Ground cumin
  • 1/4 cup Fresh squeezed lemon juice

Instructions

  1. Preheat oven to 400ºF.
  2. Place tomatoes and onions in prepared dish and roast until nicely charred or very brown.
  3. In a blender add tomato and onion mixture along with any collected juices, cilantro, garlic, cumin, lemon juice and generous pinch of salt and pepper.
  4. Remove from oven and cool down slightly before continuing.
  5. Blend until smooth and season to taste as needed.
  6. Chef's note: Sauce will keep in fridge for up to 3 days, use as a dip or as a sauce for any grilled meats.
