Charred Guasacaca Sauce

Ingredients
- 2 cups Poblano peppers, stems removed & roughly chopped, approximately 2 large poblanos
- 1 1/2 cups White onion, roughly chopped, approximately 1 medium onion
- 2 Large haas avocados, pith removed and meat scooped out
- 1 Fresh cilantro, 1 bunch, roughly chopped, lower stems removed
- 1 Fresh curly parsley, 1 bunch, roughly chopped, lower stems removed
- 4 cloves Garlic, lightly crushed, plus more as needed for extra kick if desired
- 1/4 cup Red wine vinegar
- 1/2 cup Avocado oil, or any neutral flavored vegetable oil
Instructions
- Preheat oven to 400ºF. Line an oven-safe dish with foil.
- Place peppers and onions in prepared dish and roast until nicely charred or very browned. Allow to cool down slightly before continuing.

- Place onions, peppers, and collected juices in a food processor along with avocado, cilantro, parsley, garlic and vinegar. Blend until smooth then slowly add oil until mixture is creamy and emuslified.
- Season to taste with salt and pepper as desired. Serve alongside grilled meats or use as a dip with veggies or chips. Sauce will keep in refrigeration for up to 3 days.
