Charred Green Beans with Creamy Turmeric and Almond Dressing

Ingredients
- 2 tbsp Extra virgin olive oil
- 1 tsp Fresh ginger root, peeled and grated
- 1/4 cup Fresh lemon juice
- 2 Garlic cloves, smashed
- 24 oz Green beans, rinsed and patted dry
- 1 tsp Ground black pepper
- 1/2 tsp Ground coriander
- 2 tsp Ground turmeric
- 1 tsp Honey
- 1 tsp Kosher salt
- 1/2 cup Raw almonds
- 2 tbsp Tahini
- 1 cup Water
Instructions
- Preheat oven to 400°F.
- While oven preheats make dressing by adding almonds, tahini, garlic, lemon juice, water, turmeric, honey and ginger to a blender.
- Puree ingredients on high until dressing gets thick; it can take 2-4 minutes to thicken properly. Season dressing as needed with salt and pepper and set aside.
- Place green beans in a bowl and toss them together with olive oil, salt and pepper and coriander. Place on a sheet pan and roast for 25-30 minutes or until beans are slightly charred and browned on the ends.
- Allow beans to cool. Place them in a serving dish and drizzle with almond dressing.
