Charred Green Beans with Creamy Turmeric and Almond Dressing

Ingredients

  • 2 tbsp Extra virgin olive oil
  • 1 tsp Fresh ginger root, peeled and grated
  • 1/4 cup Fresh lemon juice
  • 2 Garlic cloves, smashed
  • 24 oz Green beans, rinsed and patted dry
  • 1 tsp Ground black pepper
  • 1/2 tsp Ground coriander
  • 2 tsp Ground turmeric
  • 1 tsp Honey
  • 1 tsp Kosher salt
  • 1/2 cup Raw almonds
  • 2 tbsp Tahini
  • 1 cup Water

Instructions

  1. Preheat oven to 400°F.
  2. While oven preheats make dressing by adding almonds, tahini, garlic, lemon juice, water, turmeric, honey and ginger to a blender.
  3. Puree ingredients on high until dressing gets thick; it can take 2-4 minutes to thicken properly. Season dressing as needed with salt and pepper and set aside.
  4. Place green beans in a bowl and toss them together with olive oil, salt and pepper and coriander. Place on a sheet pan and roast for 25-30 minutes or until beans are slightly charred and browned on the ends.
  5. Allow beans to cool. Place them in a serving dish and drizzle with almond dressing.
