Champagne Slow Cooker Turkey Breast

Ingredients
- 1 Slow cooker liner
- 4 Red potatoes, halved
- 1 Small yellow onion, medium diced
- 1 tbsp Garlic, minced
- 4 Medium carrots, peeled and cut into 3-inch pieces
- 1 Fresh Turkey Breast with Ribs
- 1 tbsp Dried herbs de provence
- 1/2 tsp Kosher salt
- 1/2 tsp Ground black pepper
- 3/4 lb Mushrooms, halved
- 2 cups Champagne
Instructions
- Turn a slow cooker to low and place liner inside. Add potatoes, onion, garlic, and carrots.
- Season turkey breast with herbes de Provence, salt and pepper.
- Place a large pan over medium-high heat and spray with non-stick spray. Add turkey, sear on all sides until golden brown then transfer to slow cooker.
- Add mushrooms to the same large pan and cook for 5 minutes or until browned, stirring frequently.
- Pour champagne into hot pan and simmer for 2 minutes. Remove from heat and pour over turkey breast.
- Cover slow cooker and cook on low until turkey is fork-tender, about 8 hours.
