Champagne Slow Cooker Turkey Breast

Ingredients

  • 1 Slow cooker liner
  • 4 Red potatoes, halved
  • 1 Small yellow onion, medium diced
  • 1 tbsp Garlic, minced
  • 4 Medium carrots, peeled and cut into 3-inch pieces
  • 1 Fresh Turkey Breast with Ribs
  • 1 tbsp Dried herbs de provence
  • 1/2 tsp Kosher salt
  • 1/2 tsp Ground black pepper
  • 3/4 lb Mushrooms, halved
  • 2 cups Champagne

Instructions

  1. Turn a slow cooker to low and place liner inside. Add potatoes, onion, garlic, and carrots.
  2. Season turkey breast with herbes de Provence, salt and pepper.
  3. Place a large pan over medium-high heat and spray with non-stick spray. Add turkey, sear on all sides until golden brown then transfer to slow cooker.
  4. Add mushrooms to the same large pan and cook for 5 minutes or until browned, stirring frequently.
  5. Pour champagne into hot pan and simmer for 2 minutes. Remove from heat and pour over turkey breast.
  6. Cover slow cooker and cook on low until turkey is fork-tender, about 8 hours.
