Ceviche de Pescado (Fish Ceviche)

Ingredients
- 1 Large Avocado, cubed
- 1/4 cup Fresh red onion, finely diced
- 1 lb Fresh tilapia filets, cut into 1/2 inch chunks
- 1 Small Fresh serrano pepper, finely diced
- 1/2 cup Fresh cilantro, finely diced
- 4 Fresh roma tomatoes, seeded and diced
- 1 tsp Kosher salt
- 10 Medium Lime, juiced
Instructions
- Place cubed fish in a glass container with lime juice and marinate 6 hours or overnight in the refrigerator.
- Drain fish and set aside.
- Place serrano pepper, tomatoes, onion, and cilantro in a medium sized bowl. Stir to combine.
- Season drained fish lightly with salt and stir through tomato mixture.
- Add avocado and serve immediately with tortilla chips or saltine crackers.
