Ceviche de Pescado (Fish Ceviche)

Ingredients

  • 1 Large Avocado, cubed
  • 1/4 cup Fresh red onion, finely diced
  • 1 lb Fresh tilapia filets, cut into 1/2 inch chunks
  • 1 Small Fresh serrano pepper, finely diced
  • 1/2 cup Fresh cilantro, finely diced
  • 4 Fresh roma tomatoes, seeded and diced
  • 1 tsp Kosher salt
  • 10 Medium Lime, juiced

Instructions

  1. Place cubed fish in a glass container with lime juice and marinate 6 hours or overnight in the refrigerator.
  2. Drain fish and set aside.
  3. Place serrano pepper, tomatoes, onion, and cilantro in a medium sized bowl. Stir to combine.
  4. Season drained fish lightly with salt and stir through tomato mixture.
  5. Add avocado and serve immediately with tortilla chips or saltine crackers.
