Caulibit Risotto

Ingredients

  • 1 tbsp Extra virgin olive oil
  • 1/2 cup Diced Onion
  • 1 tbsp Fresh garlic clove, minced
  • 3 tbsp Corn starch
  • 1/4 cup Dry white wine
  • 14 oz Riced cauliflower
  • 1/2 cup Beef bone broth
  • 1/2 cup Heavy whipping cream
  • 1 cup Grana Padano cheese, grated
  • 1/2 tsp Sabatino Tartufi Truffle & Parsley Sea Salt, optional, can substitute with regular salt

Instructions

  1. Heat oil in a large non-stick sauté pan over medium-high heat. Add onions and garlic and cook until translucent but not brown.
  2. In a bowl toss the cornstarch and cauliflower together then transfer to the pan with cooked onions. Continue to cook, stirring constantly, for 1 minute then deglaze with dry white wine.
  3. Continue to cook until all the liquid is gone then add broth, bring to a simmer and continue to cook until the broth is almost gone.
  4. Stir in the cream, cheese and truffle salt. Season with pepper and remove from heat. Let cool for a few minutes before serving.
