Cast Iron Baked Cowboy Meatloaf

Ingredients
- 2 lb Prime 1 Cowboy Bacon Burgers, approximately
- 2 Large Eggs
- 1/2 cup Plain Panko Bread Crumbs
- 1 cup Ice cold water
- 1/2 cup White onion, sliced
Instructions
- In a large bowl, combine burgers, eggs, bread crumbs and water. Mix well to combine until all water is completely absorbed.
- Spray non-stick spray liberally into a Texas shaped cast iron pan. Press meat mixture evenly into pan then top with julienned onions.
- Place pan on a sheet pan to catch any grease run off then bake 45 to 50 minutes or until internal temperature is at least 160ºF.
- Allow to rest before transferring meatloaf to a serving platter. Top with condiments, cut and serve.
