Ingredients
- 10 oz Julienned carrots
- 1/3 cup Fresh mint, roughly chopped
- 1/2 cup Fresh cilantro, roughly chopped
- 1/4 cup Fresh lemons, juiced
- 2 tbsp Extra virgin olive oil
- 2 Serrano pepper(s), stems & seeds removed
- 3 Peeled garlic cloves, smashed
- 1 1/2 tsp Ground cumin
- 1 tsp Ground coriander
Instructions
- In a food processor combine, carrots, mint, cilantro, lemon juice, olive oil, serrano peppers, garlic, cumin, and coriander.
- Pulse to combine, but don't over process as mixture should still have some texture.
- Place into a serving bowl, season to taste with salt and pepper, serve over your favorite meats or as a vegetable dip.
