Ingredients

  • 10 oz Julienned carrots
  • 1/3 cup Fresh mint, roughly chopped
  • 1/2 cup Fresh cilantro, roughly chopped
  • 1/4 cup Fresh lemons, juiced
  • 2 tbsp Extra virgin olive oil
  • 2 Serrano pepper(s), stems & seeds removed
  • 3 Peeled garlic cloves, smashed
  • 1 1/2 tsp Ground cumin
  • 1 tsp Ground coriander

Instructions

  1. In a food processor combine, carrots, mint, cilantro, lemon juice, olive oil, serrano peppers, garlic, cumin, and coriander.
  2. Pulse to combine, but don't over process as mixture should still have some texture.
  3. Place into a serving bowl, season to taste with salt and pepper, serve over your favorite meats or as a vegetable dip.
