Serves 4
Ingredients
- 1 lb Ground beef 80/20
- 1 tbsp True Texas BBQ Sweet TX Heat Rub
- 14.5 oz Black Beans, drained and rinsed
- 15.5 oz Texas Style Chili No Beans
- 1/2 cup Water
- 4 Flour Tortillas, cut in half then in 1/2 inch strips
- 14 oz Pico De Gallo, drained
- 2 cups Carolina Reaper Shredded Cheese
- 2 tbsp Green onion(s), green tops only, thinly sliced
Instructions
- Place a large skillet over medium-high heat. Add ground beef and cook until no longer pink, about 8 minutes. Drain drippings from pan.
- Add BBQ seasoning, black beans, chili and water to beef and stir well to combine.
- Reduce heat to medium and add tortilla strips. Cook for 2 to 3 minutes, stirring occasionally so tortillas don't stick together.
- Spread pico de gallo over beef mixture then top with cheese. Cook 2 to 3 minutes or until cheese is melted.
- Sprinkle green onions on top and serve with sour cream if desired.
- Chefs Tip: After adding cheese, place pan under broiler until cheese melts and is beginning to brown slightly.
