Carnitas Casserole Verde

Ingredients

  • 16 oz Fully cooked seasoned pork carnitas
  • 11 oz That Green Sauce, original or mild
  • 1 cup Sour cream
  • 12 White corn tortillas, cut/torn into bite-size pieces
  • 15 oz Borracho beans, drained
  • 15 oz Canned hominy, drained
  • 8 oz Shredded Mexican style blend cheese
  • 2 tbsp Mild pico de gallo

Instructions

  1. Heat oven to 375°F.
  2. Prepare a 9x13-inch baking dish. Set aside.
  3. Heat carnitas according to package directions.
  4. Place carnitas, including any meat juices, in a mixing bowl (cut any large pieces in half).
  5. Add green sauce and sour cream, and stir to combine.
  6. Spread tortilla pieces over bottom of prepared baking dish.
  7. Layer beans and hominy over tortillas.
  8. Spoon meat mixture over top; sprinkle with cheese.
  9. Cover with foil and bake 20 minutes until casserole is hot and bubbly.
  10. Remove from oven; top servings with pico de gallo.
