Carb Friendly Zucchini Muffin

Ingredients
- 10.6 oz Swerve Chocolate Cake Mix
- 2 Zucchini
- 3 Large eggs
- 1/3 cup Canola oil
- 1/3 cup Water
- 1 tbsp Vanilla extract
- 1 oz No sugar added dark chocolate chips
Instructions
- Preheat oven to 350ºF. Line 2 muffin tins with paper liners and set aside.
- Using a box grater, shred zucchini into a clean dish towel or paper towel. Bring ends together and wring towel to squeeze out excess moisture.
- Combine all ingredients in a bowl and mix until incorporated, about 1 minute.
- Scoop batter into 16 individual muffin cups. Bake for 15 to 20 minutes or until a toothpick inserted into the center pulls out clean.
- Cool before storing.
