Ingredients

  • 1 Low carb tortilla wrap
  • 1 cup Mozzarella cheese, shredded, divided use
  • 2 tbsp Crumbled bacon pieces
  • 1/4 cup Baby spinach, chopped
  • 1 Large egg
  • 2 tbsp Parmesan, shredded

Instructions

  1. Preheat oven to 350ºF. Line a baking sheet with parchment paper.
  2. Spray both sides of the tortilla wrap with non-stick spray oil. Place on prepared pan and bake for 5 minutes.
  3. Remove from oven. Place half of mozzarella on toasted tortilla and sprinkle bacon and chopped spinach over the top. Crack egg into the center of the "pizza" and finish with remaining mozzarella and Parmesan.
  4. Place back in oven and bake for 15 minutes (egg should still be runny). Cook for additional 3 to 5 minutes for a more cooked egg.
