Caprese Tartine

Ingredients
- 1 tbsp Balsamic vinegar
- 4 oz Goat cheese
- 1 tbsp Extra virgin olive oil
- 1 Fresh basil, torn
- 8 oz Fresh mozzarella, sliced
- 1 Baguette bread, cut in half lengthwise
- 2 Medium Beefsteak tomatoes, sliced
- 3 tbsp Pesto genovese
Instructions
- Combine goat cheese and pesto in a bowl or a small food processor. Mix until smooth.
- Spread goat cheese pesto mixture on sliced baguette.
- Layer tomatoes, sliced mozzarella and basil in an alternating pattern across length of bread.
- When ready to serve, drizzle with olive oil and vinegar.
- Leftover goat cheese can be stored for 5 to 7 days in refrigerator.
