Unsaved Caprese Tartine

Ingredients

  • 1 tbsp Balsamic vinegar
  • 4 oz Goat cheese
  • 1 tbsp Extra virgin olive oil
  • 1 Fresh basil, torn
  • 8 oz Fresh mozzarella, sliced
  • 1 Baguette bread, cut in half lengthwise
  • 2 Medium Beefsteak tomatoes, sliced
  • 3 tbsp Pesto genovese

Instructions

  1. Combine goat cheese and pesto in a bowl or a small food processor. Mix until smooth.
  2. Spread goat cheese pesto mixture on sliced baguette.
  3. Layer tomatoes, sliced mozzarella and basil in an alternating pattern across length of bread.
  4. When ready to serve, drizzle with olive oil and vinegar.
  5. Leftover goat cheese can be stored for 5 to 7 days in refrigerator.
