Caprese Kabobs

Ingredients
- 1 pt Cherry tomatoes
- 1 oz Baby Arugula
- 8 oz Fresh Mozzarella Bocconcini, halved
- 2 tbsp Balsamic Vinegar Glaze
- 1 tbsp Pesto Genovese
- 1 tbsp Extra Virgin Olive Oil
Instructions
- Using decorative toothpicks or mini-skewers, thread 1 tomato, 2 arugula leaves and 1 half mozzarella ball onto each skewers.
- In a small bowl whisk together balsamic vinegar, pesto and olive oil, drizzling over kabobs just before serving.
- Finish with a few coarse grains of salt on each.
