Caprese Crustini

Ingredients

  • 1/3 cup Extra virgin olive oil
  • 4 tbsp Adams Reserve Cacio e Pepe Bread Dipper
  • 2 tbsp Balsamic vinegar
  • 1 Fresh baguette bread, sliced1 inch thick
  • 2 Medium Greenhouse tomatoes, sliced 1 inch thick, and quartered
  • 8 oz Fresh mozzarella, sliced 1 inch thick, and quartered
  • 0.7 oz Fresh basil, diced

Instructions

  1. Preheat oven to 400ºF. Line a baking sheet with foil and set aside.
  2. Mix olive oil, Cacio e Pepe, and balsamic vinegar in a medium bowl. Dip bread slices on both sides and place on prepared baking sheet.
  3. Bake 5 to 7 minutes or until nicely toasted. Transfer to a serving plate.
  4. Top each crustini with a slice of tomato and mozzarella, and spoon remaining olive oil mixture over each. Garnish with basil and serve.
