Caprese Chicken

Unsaved Caprese Chicken

Ingredients

  • 1/4 cup Balsamic vinegar
  • 1 lb Boneless, skinless chicken breasts
  • 1 pt Cherry tomatoes, halved
  • 1 tbsp Extra virgin olive oil
  • 1/4 cup Fresh basil, torn or roughly chopped
  • 4 oz Fresh mozzarella, sliced
  • 2 tsp Garlic cloves, minced
  • 1/2 tsp Ground black pepper
  • 1/4 tsp Kosher salt

Instructions

  1. Heat oil in a large skillet on medium-high.
  2. Season chicken with salt and pepper then cook approximately 6 minutes per side. Remove from skillet and set aside.
  3. Stir in vinegar to deglaze pan.
  4. Add garlic and cook 1 minute, stirring constantly.
  5. Add tomatoes and cook 5 minutes or until softened. Stir occasionally.
  6. Sprinkle in basil and stir to combine. Return chicken to pan and gently turn to coat both sides with sauce.
  7. Top each chicken breast with mozzarella and cover pan.
  8. Once cheese has melted, remove chicken from pan, top with tomatoes and serve.
