Caprese Chicken

Serves 4
Ingredients
- 1/4 cup Balsamic vinegar
- 1 lb Boneless, skinless chicken breasts
- 1 pt Cherry tomatoes, halved
- 1 tbsp Extra virgin olive oil
- 1/4 cup Fresh basil, torn or roughly chopped
- 4 oz Fresh mozzarella, sliced
- 2 tsp Garlic cloves, minced
- 1/2 tsp Ground black pepper
- 1/4 tsp Kosher salt
Instructions
- Heat oil in a large skillet on medium-high.
- Season chicken with salt and pepper then cook approximately 6 minutes per side. Remove from skillet and set aside.
- Stir in vinegar to deglaze pan.
- Add garlic and cook 1 minute, stirring constantly.
- Add tomatoes and cook 5 minutes or until softened. Stir occasionally.
- Sprinkle in basil and stir to combine. Return chicken to pan and gently turn to coat both sides with sauce.
- Top each chicken breast with mozzarella and cover pan.
- Once cheese has melted, remove chicken from pan, top with tomatoes and serve.
