Calabaza, Corn and Queso

Serves 4

Ingredients

  • 2 Medium calabaza squash, ends removed, sliced into 1/4 thick rounds
  • 4 Ears corn on the cob
  • 1 tbsp Tajín Seasoning, divided use
  • 1 tbsp Unsalted butter
  • 1/2 cup Red onions, medium diced
  • 4 oz Hatch Diced Green Chiles
  • 1/4 cup Queso fresco, crumbled

Instructions

  1. Heat a gas or charcoal grill to medium-high. Spray squash and corn with non-stick spray and season with half of Tajín seasoning.
  2. Place corn on grill and cook until bright yellow and some of the kernels are slightly charred, about 10 minutes.
  3. Lay squash on grill and cook 2 to 3 minutes per side or until softened with grill marks on each side.
  4. Using a sharp knife, carefully cut corn from cobs and dice squash into medium-sized pieces. Place all in a medium bowl and add butter, remaining Tajin seasoning, red onions, and Hatch Chiles. Toss gently to combine.
  5. Top with queso fresco and serve warm or chill for a cold salad.
