Unsaved Cajun Shrimp Salad Cups

Ingredients

  • 1 lb Cooked medium shrimp, peeled and deveined
  • 3/4 cup Cajun trinity blend vegetable mix
  • 1/2 cup Mayonnaise
  • 1 1/2 tsp Louisiana style hot sauce
  • 1 1/2 tsp Worcestershire sauce
  • 1 tsp Cajun seasoning
  • 2 tbsp Fresh parsley, minced
  • 6 Lettuce leaf cups, whole butter or green leaf lettuce leaves

Instructions

  1. In a large bowl combine mayonnaise, hot sauce, Worcestershire sauce, Cajun seasoning, and trinity vegetables. Whisk well to combine.
  2. Fold shrimp and parsley into mayonnaise mixture until well coated. Spoon into lettuce cups and serve 2 per person.
