Cajun Potato and Andouille Sausage Skillet

Ingredients

  • 1/2 tbsp Extra virgin olive oil
  • 12 oz Andouille sausage, ends trimmed, sliced into 1/4 inch rounds
  • 1/2 cup Creole seasoning
  • 16 oz Cajun style baby potatoes
  • 14.5 oz Diced tomatoes
  • 2 tbsp Fresh green onion(s), green tops only, thinly sliced

Instructions

  1. Add oil to a large skillet set over medium-high heat. When hot, add sausage and cook for 2 minutes, stirring occasionally.
  2. Add creole seasoning mix and baby potatoes. Stir and let cook for 2 minutes.
  3. Add diced tomatoes, cover pan, and reduce heat to medium. Cook for 15 minutes, stirring once.
  4. Sprinkle with green onions and serve.
