Cactus Salsa

Ingredients

  • 16 oz Nopales (cactus)
  • 1/2 cup Green onion, chopped
  • 1 lb Jalapeño pepper, seeded and minced
  • 1 cup Roma tomatoes, seeded, and diced
  • 1/4 cup Fresh cilantro, chopped
  • 1 Large garlic clove, minced
  • 2 Lime, juiced
  • 1/2 tsp Kosher salt
  • 1/2 tsp Ground black pepper

Instructions

  1. In a blender or food processor, combine all ingredients together and season with salt and pepper.
  2. Allow ingredients to sit in refrigerator at least 30 minutes allowing flavors to meld. Use as salsa for dipping, or topped over grilled fajitas.
