Unsaved Buttermilk & Honey Mustard Zucchini Fries

Ingredients

  • 1 qt Vegetable oil, at least 3 to 4 cups of oil or as needed for frying
  • 4 Medium zucchini squash, cut into fry-size sticks or thin wedges
  • 2 cups Low Fat Cultured 1% Milkfat Buttermilk, plus more as needed to soak zucchini
  • 2 cups Egg whites, plus more as needed for dredging
  • 2 cups All Purpose Flour, plus more as needed for dredging
  • 9 oz H-E-B Honey Mustard Snack Mix, crushed into panko-size breadcrumbs

Instructions

  1. Add oil to a medium-sized Dutch oven or cast iron skillet and bring temperature to 350°F, adjusting heat as needed to maintain temperature.
  2. Place zucchini fries into a bowl, pour in buttermilk and toss to coat. Set aside to soak while prepping other ingredients.
  3. Set up a dredging station by placing egg whites, flour, and honey mustard crumbs in 3 separate shallow bowls.
  4. Season flour with a liberal pinch of salt and pepper and mix to combine.
  5. Place a sheet pan fitted with a wire rack next to the Dutch oven.
  6. To fry, shake off excess buttermilk from zucchini, then dredge in flour, egg whites and finally mustard crumbs.
  7. Working In small batches to help maintain fryer temperature, place zucchini in hot oil until nicely browned and crisp. Remove to prepared sheet pan to drain and season with salt.
  8. Serve zucchini fries hot with your favorite sauces.
