Burrito Bowl with Cilantro Ranch

Serves 4

Ingredients

  • 1 tsp Extra virgin olive oil
  • 1 Red bell pepper, cored, seeded and julienned
  • 1 Green peppers, julienned
  • 1 Small White onions, julienned
  • 1 No salt added black beans
  • 1 Barley and lentils quick heat grains
  • 1 Large avocado
  • 1/2 cup Non-fat plain Greek yogurt
  • 2 tbsp Powdered ranch dressing mix
  • 1/2 Fresh cilantro
  • 2 cups Napa cabbage, shredded
  • 2 cups Roma tomatoes, diced

Instructions

  1. Place a large skillet over high heat. Add oil, peppers and onions, and cook about 3 to 4 minutes, stirring occasionally. Peppers and onions should still be slightly firm. Remove from pan and set aside.
  2. Place beans in a microwave safe bowl and cook until heated through.
  3. Cook the grains according to package directions.
  4. To make the sauce combine avocado, yogurt, ranch dressing mix and cilantro in a blender or food processor. Blend until smooth.
  5. Divide all the ingredients evenly among four bowls, including shredded cabbage and diced tomoates. Drizzle with cilantro ranch.
