Brussels Mushroom Egg Casserole

Serves 4

Ingredients

  • 2 tbsp Olive oil
  • 1 tsp Kosher salt
  • 1 tsp Ground black pepper
  • 2 tsp Dried thyme
  • 1/2 lb Gruyere cheese, shredded
  • 1 bag Brussels sprouts, halved
  • 1 Small yellow onion, finely chopped
  • 32 fl oz Egg whites
  • 1/2 cup Mushrooms, sliced

Instructions

  1. Preheat oven to 400°F.
  2. In a large pan over low heat, combine 1 tablespoon oil, onions and thyme.
  3. Cook 30-45 minutes, stirring occasionally, until onions are tender and brown. Place in a large bowl.
  4. Toss Brussels sprouts and mushrooms with remaining oil and pour onto a baking sheet.
  5. Roast 20-30 minutes or until golden brown.
  6. Carefully remove from oven and add to onions.
  7. Add remaining ingredients and stir to combine.
  8. Pour into a 9x13 inch baking dish sprayed with non-stick cooking spray.
  9. Set oven at 375°F.
  10. Bake uncovered approximately 30 minutes or until casserole has set.
