Bruised Kale Cranberry Salad

Ingredients

  • 12 oz Kale greens
  • 3 tbsp Extra virgin olive oil
  • 1/3 cup Honey mustard vinaigrette
  • 1/2 cup Dried sweetened cranberries, chopped
  • 1/3 cup Smokehouse almonds, chopped
  • 1/4 cup Green onions, very finely diced, green and white parts
  • 1/3 cup Crumbled feta

Instructions

  1. Put kale on a cutting board, and rough chop into small pieces removing any thick, woody stems.
  2. Place kale in a large bowl, then drizzle with olive oil. Massage oil into kale firmly for about 1 to 2 minutes. Kale will wilt slightly and shrink in volume.
  3. Drizzle with vinaigrette. Add cranberries, smoke almonds, green onions and feta. Toss gently and thoroughly.
  4. Chef's note: delicious immediately, but also refrigerates well for up to 3 days.
