Browned Butter and Herb Rainbow Trout

Ingredients

  • 1 1/2 tsp H-E-B Select Ingredients Fish Market Zesty Romano Herb Spice Blend
  • 1 1/2 tbsp Potato Starch
  • 2 Medium fresh Rainbow Trout filets, (about 3/4 lb total)
  • 2 tbsp Salted Butter
  • 1 Medium lemon, sliced - half for squeezing over fish and for garnish

Instructions

  1. Mix seasoning and potato starch together and spread out on a plate.
  2. Place trout on a cutting board and run edge of a sharp knife a few times from the head end to the narrower tail end of the filets. Be careful not to cut the fish skin; this removes some of the loose fish scales and debris from the skin so it is edible.
  3. Rinse trout gently under cool running water and pat mostly dry with paper towels. Press both sides of fish firmly into seasoned potato starch and set aside.
  4. Heat a large skillet over medium heat and add butter. When butter starts to foam up and turn light brown, add fish skin-side down. Cook 2 to 3 minutes then gently flip over. Cook another 1 to 2 minutes, or just to a golden brown.
  5. Deglaze pan with a few squeezes of fresh lemon juice and remove trout to a serving plate. Garnish with more fresh lemon and freshly chopped parsley, if desired.
