Broiled Salmon with Grapefruit

Ingredients

  • 1 lb Whole salmon fillet
  • 1 tsp Kosher Salt, plus more as needed
  • 1 tsp Ground black pepper, plus more as needed
  • 1 Star grapefruit, sliced thinly

Instructions

  1. Preheat broiler and set top rack 6 to 8 inches below broiler. Season salmon with salt and pepper then lay grapefruit slices evenly over the fillet.
  2. Place on a sheet pan lined with foil. Broil 10 to 15 minutes or until salmon reaches an internal temperature of 145ºF. Remove from oven and allow to rest 5 to 10 minutes.
  3. Remove grapefruit slices and gently squeeze any remaining juices over salmon, season to taste, and garnish with fresh herbs as desired.
