Broccolini with Melted Garlic and Chilis

Serves 4

Ingredients

  • 2 tbsp Sunflower oil
  • 2 tbsp Garlic cloves, very thinly sliced
  • 1 lb Broccolini
  • 1 tsp Crushed red pepper flakes, as needed
  • 1 tbsp Red wine vinegar

Instructions

  1. Place a large non-stick pan over medium high heat then add oil and allow to get hot.
  2. Add garlic and sauté until just starting to brown. Add broccolini and red pepper flakes and sauté 3 to 5 minutes.
  3. Add vinegar, toss until completely evaporated then season to taste as needed and remove from heat. Broccolini should still be slightly crunchy.
  4. Serve immediately and garnish with Pecorino Romano if desired.
