Broccoli With Red Bell Pepper Garnish

Ingredients

  • 1 Red bell pepper, cored and seeded
  • 2 lb Broccoli, trimmed and cut in stalks
  • 2 tbsp Extra virgin olive oil
  • 2 tbsp Red wine vinegar
  • 2 tbsp Less sodium soy sauce
  • 8 tsp Granulated sugar
  • 2 tbsp Sesame seeds
  • 1/8 tsp Kosher salt
  • 1/8 tsp Ground black pepper

Instructions

  1. Cut red pepper into large pieces so you have flat pieces of pepper.
  2. Use small cookie cutters to cut pepper into decorative shapes to garnish broccoli.
  3. Steam broccoli and red pepper pieces over a small amount of boiling water for 15 minutes, or until tender. Drain and set aside.
  4. In a small saucepan, combine olive oil, red wine vinegar, soy sauce, sugar and sesame seeds. Heat to boiling.
  5. Pour over broccoli and peppers and toss to coat.
  6. Season with salt and pepper.
