Broccoli Tacos

Serves 4
Ingredients
- 1/4 cup Extra virgin olive oil
- 1 tsp Ground cumin
- 3 Garlic clove, minced or zested
- 16 oz Riced broccoli
- 1 Medium jalapeño pepper, minced
- 12 oz Pico de gallo
- 2 tbsp Lime, fresh juice
- 2.5 oz Taco shells, as needed
Instructions
- Place a large non-stick sauté pan or pot over medium heat. Add oil and allow to get hot, then add cumin and garlic.
- Stir-fry until garlic just starts to color slightly, approximately 1 to 2 minutes. Add broccoli rice, jalapeño, and pico de gallo.
- Continue to cook until liquid is evaporated. At this point turn off heat, season to taste with salt and pepper and stir in lime juice.
- For serving, simply spoon broccoli mixture into taco shells and garnish with your favorite topping and salsa. Repeat as needed with additional tacos.
