Broccoli Tacos

Serves 4

Ingredients

  • 1/4 cup Extra virgin olive oil
  • 1 tsp Ground cumin
  • 3 Garlic clove, minced or zested
  • 16 oz Riced broccoli
  • 1 Medium jalapeño pepper, minced
  • 12 oz Pico de gallo
  • 2 tbsp Lime, fresh juice
  • 2.5 oz Taco shells, as needed

Instructions

  1. Place a large non-stick sauté pan or pot over medium heat. Add oil and allow to get hot, then add cumin and garlic.
  2. Stir-fry until garlic just starts to color slightly, approximately 1 to 2 minutes. Add broccoli rice, jalapeño, and pico de gallo.
  3. Continue to cook until liquid is evaporated. At this point turn off heat, season to taste with salt and pepper and stir in lime juice.
  4. For serving, simply spoon broccoli mixture into taco shells and garnish with your favorite topping and salsa. Repeat as needed with additional tacos.
