Breakfast Taquito Surprise

Ingredients
- 1 tsp Canola oil
- 2 tbsp White onion, chopped
- 1/4 cup Green bell pepper, chopped
- 1/4 cup Tomato, chopped
- 1 tbsp Fresh jalapeno pepper, chopped
- 1 tbsp Fresh cilantro, chopped
- 1/2 cup Liquid eggs
- 1 Yellow corn tortillas, cut into thin strips
- 1/4 tsp Fajita spice
- 2 tbsp Mild chunky salsa
Instructions
- Heat a heavy bottom skillet over high heat for 2 minutes.
- Add the canola oil and onions and stir-fry for 2 minutes.
- Add the bell pepper and tomato and stir-fry for 1 minute, then add jalapeños and cilantro and stir-fry for 1 minute.
- Reduce heat to medium low and add the eggs stirring often until eggs are cooked to desired doneness.
- Add the tortilla strips and stir until strips are heated through.
- Season with fajita spice and top with salsa if desired and enjoy!
