Unsaved Breakfast Taquito Surprise

Ingredients

  • 1 tsp Canola oil
  • 2 tbsp White onion, chopped
  • 1/4 cup Green bell pepper, chopped
  • 1/4 cup Tomato, chopped
  • 1 tbsp Fresh jalapeno pepper, chopped
  • 1 tbsp Fresh cilantro, chopped
  • 1/2 cup Liquid eggs
  • 1 Yellow corn tortillas, cut into thin strips
  • 1/4 tsp Fajita spice
  • 2 tbsp Mild chunky salsa

Instructions

  1. Heat a heavy bottom skillet over high heat for 2 minutes.
  2. Add the canola oil and onions and stir-fry for 2 minutes.
  3. Add the bell pepper and tomato and stir-fry for 1 minute, then add jalapeños and cilantro and stir-fry for 1 minute.
  4. Reduce heat to medium low and add the eggs stirring often until eggs are cooked to desired doneness.
  5. Add the tortilla strips and stir until strips are heated through.
  6. Season with fajita spice and top with salsa if desired and enjoy!
