Breakfast Meatballs

Unsaved Breakfast Meatballs

Ingredients

  • 2 Large eggs
  • 1/2 cup Fresh grated parmesan cheese
  • 1 cup Garlic panko crumbs
  • 1/2 cup Green onion, chopped
  • 1 lb Hot breakfast sausage
  • 1 lb Sage breakfast sausage

Instructions

  1. Preheat oven to 400˚F.
  2. In a large bowl, combine sausages, panko, eggs, green onions, cheese, and 1 cup of cold water.
  3. Mix well to combine and form 18 to 24 meatballs. Approximately the size of a golf ball.
  4. Place meatballs into a well oiled oven safe casserole dish, meatballs should all be touching.
  5. Bake for 30 to 45 minutes or until meatballs are nicely browned.
  6. Allow meatballs to cool before serving. Season to taste as needed and serve next to some fried eggs and hash browns for a complete meal.
  7. Chef's Note: For a more authentic meatball you can fry meatballs in a bit of oil and a non-stick pan to crisp them before placing in oven to finish cooking.
