Serves 1

Ingredients

  • 1 Medium lettuce leaf
  • 1 Large egg
  • 4 slices Bacon, cooked to desired doneness, drained, and kept warm
  • 1/4 tsp Black pepper
  • 1/8 tsp Kosher salt
  • 2 slices Low carb bread
  • 1 tbsp Mayonnaise
  • 1 slice Tomato

Instructions

  1. Heat a large skillet over medium-high heat. Spread mayonnaise on one side of each piece of bread. Place in pan, mayonnaise-side down and cook until bread is well browned. Remove from pan and reserve.
  2. Return pan to heat and spray with non-stick spray. Crack egg into pan, season with salt and pepper, and cook until egg reaches desired doneness. Remove from heat.
  3. Lay egg on untoasted side of 1 slice of bread. Top with bacon, tomato, lettuce, and remaining slice of bread, untoasted-side down. Serve immediately.
