Unsaved Breaded Parmesan Zucchini Sticks

Ingredients

  • 3 Medium Zucchini squash, ends trimmed then cut into wedges
  • 2 Large Eggs, large
  • 1/2 cup Grated parmesan cheese
  • 1/3 cup Italian Style Bread Crumbs
  • 1/2 tsp Kosher salt
  • 1/4 tsp Ground black pepper

Instructions

  1. Heat oven to 400°F.
  2. Cover a large baking sheet with foil for easy clean-up.
  3. Beat eggs in a shallow bowl.
  4. Combine parmesan, breadcrumbs, salt and pepper on a plate.
  5. Dip zucchini in egg, then turn in cheese mixture to coat.
  6. Place wedges, skin-side down, on baking sheet in a single layer.
  7. Bake 20 to 25 minutes or until light golden brown.
  8. Serve while hot.
