Braised Pork Loin

Ingredients
- 1 1/2 lb Pork loin
- 2 Carrots, chopped
- 1 cup Low sodium chicken broth
- 2 tbsp Garlic cloves, chopped
- 2 tbsp Ground cumin
- 1/4 tsp Black pepper
- 1/4 tsp Kosher salt
- 2 Russet potato, quartered
- 1 White onions, chopped
- 1 tbsp Canola oil
- 2 Fresh rosemary, sprigs
Instructions
- Mix oil with salt, pepper, and cumin. Add pork and turn to coat.
- Heat a large pan to medium-high. Add pork and cook 15 minutes, turning often.
- Once seared, place pork in a slow cooker.
- Add carrots, onions, potatoes, rosemary, and garlic to same hot pan used for the pork and sauté; 10 minutes.
- Pour potato mixture over pork and add chicken broth.
- Cover slow cooker, turn heat to low, and cook 8 hours.
