Braised Pork Loin

Ingredients

  • 1 1/2 lb Pork loin
  • 2 Carrots, chopped
  • 1 cup Low sodium chicken broth
  • 2 tbsp Garlic cloves, chopped
  • 2 tbsp Ground cumin
  • 1/4 tsp Black pepper
  • 1/4 tsp Kosher salt
  • 2 Russet potato, quartered
  • 1 White onions, chopped
  • 1 tbsp Canola oil
  • 2 Fresh rosemary, sprigs

Instructions

  1. Mix oil with salt, pepper, and cumin. Add pork and turn to coat.
  2. Heat a large pan to medium-high. Add pork and cook 15 minutes, turning often.
  3. Once seared, place pork in a slow cooker.
  4. Add carrots, onions, potatoes, rosemary, and garlic to same hot pan used for the pork and sauté; 10 minutes.
  5. Pour potato mixture over pork and add chicken broth.
  6. Cover slow cooker, turn heat to low, and cook 8 hours.
