Braised Chicken with Bacon, Apples and Brussels Sprouts

Serves 4

Ingredients

  • 2 1/4 lb Natural bone-in chicken thighs
  • 3 tbsp Avocado oil
  • 1 cup Center cut bacon, diced small
  • 1 cup White onions, diced small or minced
  • 5 cloves Garlic, minced fine or zested
  • 6 sprigs Fresh thyme, 4 to 6 whole sprigs
  • 1 Fresh rosemary sprig, 1 large or 2 medium sprigs
  • 2 cups Envy apples, stem removed, cored, cut in half and sliced
  • 2 cups Shaved Brussels sprouts
  • 1/4 cup Apple cider vinegar
  • 2 cups Chicken bone broth or stock
  • 1/4 cup Whole grain or Dijon mustard

Instructions

  1. Place a large, high-sided skillet or Dutch oven with a lid over medium heat.
  2. Season chicken liberally on all sides with salt and pepper. Add oil to hot skillet and allow to get hot or shimmer before adding chicken thighs, skin-side down.
  3. Sear chicken for 6 to 10 minutes or until skin is nicely browned. Flip and cook for an additional 6 to 10 minutes. Transfer to a bowl to rest.
  4. In the same pan, add bacon and stir-fry for 3 to 5 minutes. Add onions, garlic, thyme, rosemary sprigs, and a large pinch of salt and pepper. Continue to stir-fry until bacon and onions just start to color.
  5. Add apples and Brussels sprouts and cook for an additional 3 to 5 minutes. Stir in vinegar to deglaze the pan and cook until vinegar evaporates.
  6. Stir in stock and mustard and scrape bottom of pan to release any remaining burned bits. Bring to a simmer.
  7. Return chicken thighs and any collected juices to the pan, making sure thighs are nestled in the pan so broth comes halfway up the chicken. Cover pan.
  8. Turn heat to low and cook for at least 45 minutes to 1 hour or until chicken's internal temperature is at least 170ºF.
  9. Discard herbs before serving. Season to taste and serve over rice or riced cauliflower.
