Braised Chicken with Bacon, Apples and Brussels Sprouts

Ingredients
- 2 1/4 lb Natural bone-in chicken thighs
- 3 tbsp Avocado oil
- 1 cup Center cut bacon, diced small
- 1 cup White onions, diced small or minced
- 5 cloves Garlic, minced fine or zested
- 6 sprigs Fresh thyme, 4 to 6 whole sprigs
- 1 Fresh rosemary sprig, 1 large or 2 medium sprigs
- 2 cups Envy apples, stem removed, cored, cut in half and sliced
- 2 cups Shaved Brussels sprouts
- 1/4 cup Apple cider vinegar
- 2 cups Chicken bone broth or stock
- 1/4 cup Whole grain or Dijon mustard
Instructions
- Place a large, high-sided skillet or Dutch oven with a lid over medium heat.
- Season chicken liberally on all sides with salt and pepper. Add oil to hot skillet and allow to get hot or shimmer before adding chicken thighs, skin-side down.
- Sear chicken for 6 to 10 minutes or until skin is nicely browned. Flip and cook for an additional 6 to 10 minutes. Transfer to a bowl to rest.
- In the same pan, add bacon and stir-fry for 3 to 5 minutes. Add onions, garlic, thyme, rosemary sprigs, and a large pinch of salt and pepper. Continue to stir-fry until bacon and onions just start to color.
- Add apples and Brussels sprouts and cook for an additional 3 to 5 minutes. Stir in vinegar to deglaze the pan and cook until vinegar evaporates.
- Stir in stock and mustard and scrape bottom of pan to release any remaining burned bits. Bring to a simmer.
- Return chicken thighs and any collected juices to the pan, making sure thighs are nestled in the pan so broth comes halfway up the chicken. Cover pan.
- Turn heat to low and cook for at least 45 minutes to 1 hour or until chicken's internal temperature is at least 170ºF.
- Discard herbs before serving. Season to taste and serve over rice or riced cauliflower.
