Borracho Brisket Chili

Ingredients
- 1 tbsp Extra virgin olive oil
- 1 cup Sweet onions, finely chopped
- 12 oz Fully cooked split pre‑sliced brisket
- 2 tsp Fresh garlic clove, finely minced
- 29 oz Petite diced tomatoes with green chiles
- 15 oz Borracho beans
- 1.2 oz Texas chili seasoning mix
Instructions
- Heat a large pot over medium-high. Add oil and chopped onion to pan. Cook for 4 to 5 minutes, or until onion starts to soften.
- While onion is cooking remove brisket from package. Using a sharp knife cut across the grain where meat is already sliced to make smaller chunks.
- Add meat and garlic to onion. Stir to break meat apart and heat through, about 2 to 3 minutes.
- Add tomatoes, beans and chili mix. Stir to combine and bring to a simmer, uncovered.
- Cook for 12 to 15 minutes. Serve with tortilla chips and shredded cheddar cheese if desired.
