Blue Cheese Meatballs

Ingredients
- 1 Grilling Mesh or Vegetable Grilling Rack
- 1 lb Extra Lean 96% Lean Ground Beef
- 1 Large eggs, whites only, beaten
- 1/2 tsp Kosher salt
- 1 tsp Ground black pepper
- 2/3 cup Crumbled blue cheese, divided use
- 1/4 cup Light sour cream
- 1 tbsp Half & half
Instructions
- Line baking sheet with foil, insert grilling mesh or vegetable grilling rack, and spray with no stick cooking spray.
- Combine lean ground beef, beaten egg white, salt, pepper, and half of the crumbled blue cheese in mixing bowl. Do not overmix or meatballs will be tough.
- Form meat into 16 balls (1 tablespoon each) and place on prepared grilling mesh.
- Cover meatballs with plastic wrap and chill for 30 minutes before grilling.
- Heat gas or charcoal grill to 375°F.
- Grill meatballs for 10 minutes with the lid closed.
- Meanwhile the meatballs are cooking, mix dipping sauce ingredients: remaining blue cheese, sour cream and half & half in a small bowl.
- Serve meatballs with dipping sauce.
