Blackened Salmon with Homemade Rub

Ingredients
- 2 tbsp Avocado oil
- 1 tsp Cayenne pepper seasoning
- 1 tbsp Ground black pepper
- 1/4 cup Paprika
- 2 tbsp Garlic powder
- 2 tbsp Ground coriander
- 1 lb Salmon fillet
- 1 1/4 tbsp Ground black pepper
- 2 tbsp Ground mustard
- 2 tbsp Kosher salt
- 2 tbsp Brown sugar
- 1/4 cup Chili powder
- 1 tbsp Ground cumin
Instructions
- Assemble spice rub and coat salmon with a liberal amount. Set aside for 10 minutes. NOTE: Seal leftover rub in a bag or container and use it over and over. Good for 6 months.
- Preheat grill to 350ºF or medium heat. Spray or wipe grill liberally with avocado oil (keeps fish from sticking).
- Grill salmon 3 to 4 minutes per side or until internal temperature reaches 140ºF. Serve with sweet potato fries or dirty rice.
