Unsaved Blackened Salmon with Homemade Rub

Ingredients

  • 2 tbsp Avocado oil
  • 1 tsp Cayenne pepper seasoning
  • 1 tbsp Ground black pepper
  • 1/4 cup Paprika
  • 2 tbsp Garlic powder
  • 2 tbsp Ground coriander
  • 1 lb Salmon fillet
  • 1 1/4 tbsp Ground black pepper
  • 2 tbsp Ground mustard
  • 2 tbsp Kosher salt
  • 2 tbsp Brown sugar
  • 1/4 cup Chili powder
  • 1 tbsp Ground cumin

Instructions

  1. Assemble spice rub and coat salmon with a liberal amount. Set aside for 10 minutes. NOTE: Seal leftover rub in a bag or container and use it over and over. Good for 6 months.
  2. Preheat grill to 350ºF or medium heat. Spray or wipe grill liberally with avocado oil (keeps fish from sticking).
  3. Grill salmon 3 to 4 minutes per side or until internal temperature reaches 140ºF. Serve with sweet potato fries or dirty rice.
