Blackened Salmon Croquettes

Ingredients
- 1 Canned pink salmon, 2 Cans
- 2 Large eggs
- 1/2 cup Green peppers, diced
- 2 cups Whole wheat bread crumbs
- 4 tbsp Blackened seasoning spice blend
- 1/4 cup Vegetable oil
Instructions
- Combine salmon, eggs, peppers and 1 cup of bread crumbs in a large bowl. Mix very well and set aside.
- In a shallow dish mix together remaining cup of bread crumbs and seasoning.
- Warm 2 tablespoons of vegetable oil over medium-heat in a non-stick skillet.
- Take 2 heaping tablespoons of salmon mixture and form into a patty.
- Bread patty with seasoned crumbs and place in skillet. Do not over fill skillet with patties.
- Cook on each side until golden brown and add salt.
