  • 1 Canned pink salmon, 2 Cans
  • 2 Large eggs
  • 1/2 cup Green peppers, diced
  • 2 cups Whole wheat bread crumbs
  • 4 tbsp Blackened seasoning spice blend
  • 1/4 cup Vegetable oil

Instructions

  1. Combine salmon, eggs, peppers and 1 cup of bread crumbs in a large bowl. Mix very well and set aside.
  2. In a shallow dish mix together remaining cup of bread crumbs and seasoning.
  3. Warm 2 tablespoons of vegetable oil over medium-heat in a non-stick skillet.
  4. Take 2 heaping tablespoons of salmon mixture and form into a patty.
  5. Bread patty with seasoned crumbs and place in skillet. Do not over fill skillet with patties.
  6. Cook on each side until golden brown and add salt.
