Quick & easy:Blackened Catfish with Cheesy Cauliflower Grits

Ingredients

  • 1 tbsp Blackened seasoning, divided use
  • 7 oz Cauliflower rice
  • 2 tbsp Diced bell pepper & white onion
  • 2 Raw catfish fillets
  • 1/3 cup Sharp cheddar cheese

Instructions

  1. Season catfish with 1/2 tablespoon of blackened seasoning.
  2. Heat 1 tablespoon of oil in a large skillet set over medium-high heat. When oil just begins to smoke, add fish fillets, and cook 4 minutes per side. Transfer to a plate and keep warm.
  3. Drain oil from pan and add cauliflower rice, remaining seasoning, and bell pepper and onion mix. Cook for 2 to 3 minutes, stirring frequently.
  4. Add cheese and 1/4 cup water and stir until cheese is melted. Serve fish over cauliflower mixture.
